Interview with Adam Jacoby, Managing Partner at Dirty Birds Bar & Grill

Raised in South Windsor, Connecticut, Adam Jacoby moved to San Diego in 1996. He hopes Dirty Birds will be a household name in the kitchen and that Dirty Birds Sauces will be on restaurant menus nationwide. In his time off, Adam enjoys playing golf and pickleball, and spending time with his wife and two daughters.

First Dirty Birds | The first Dirty Birds Bar and Grill was opened in 2008 in Pacific Beach. Share some of your reflections related to the launch and the first couple of years?

Dirty Birds founders Jonathan Ollis and Adam Jacoby opened the original Dirty Birds Bar and Grill location in Pacific Beach in 2008, followed by a second in 2015 near the college area of San Diego State University. Today, there are a total of five locations, which include Liberty Station, Ocean Beach, and UCSD. In addition to its brick-and mortars, Dirty Birds is mobile with the Dirty Birds Food Truck, which serves a scaled back menu of 20 different chicken wing flavors, boneless chicken, a chicken sandwich, smothered fries and tots, onion rings, and cheddar breaded cauliflower.

Dirty Birds has received national recognition for their efforts, named among the best wing spots in the U.S. by Yahoo Sports and the Daily Meal.
